F.K.A.B.A.M Burns QV 9 (or possibly 10)

When the darlings Lee and Kate Tiernan announced that after a decade of thrilling our tongues, astonishing our eyes and vibrating our eardrums, they were closing Black Axe Mangal, aka BAM, aka F.K.A.B.A.M, our hearts felt like they’d been flame-grilled and skewered by Lee himself. A genuinely unique and fun institution that delighted in shock, awe and glitter (and let it be said, cocks), while always putting flavour and ingredients first and foremost. Lee and Kate proved that restaurants didn’t need to be unadorned, unsoundtracked white rooms to be serious about provenance. They showed us that maximalism can be more.
But we are not here to eulogise. The great thing about creative geniuses like the Tiernans is that there’s always a next thing to look forward to, and whatever the next iteration is will undoubtedly wow us like never before.
Before that, Burns Night. We can’t quite work out if this is the 9th or 10th one we’ve done together – because well, you know how these evenings get – but we suspect it’s the 9th. Every year somehow improves upon the last, with an almost wholly unorthodox menu, enthusiastic addressing of the haggis, bagpiping through the building and Jeremy Lee in his kilt and sporran.
The menu this year is:
beef sirloin tonnata
bergamot dressing, kimchi, dried shrimp, bitter leaves
