If there is one way to shake off the shackles of winter, it is with a feast celebrating the end of the hunger gap. An indulgence of our carnivourous tendencies to leave us sated, merry and giddy with the joys of the finer things in life.

For such an occasion, the choice was simple: to turn to the much-adored Swaledale Butchers who ensure that the QV kitchen is always supplied with the finest meat from the Yorkshire Dales. Swaledale is a family-run, whole-carcass butchers who specialise in heritage breeds of cattle, sheep, pigs and native game birds. With an overarching emphasis on small-scale farming and free-roaming livestock, their meat is as sustainable as it is succulent.

To fully align with their nose-to-tail eating, Jeremy, along with Swaledale’s masterful George Ryle, has designed a four-course feast that makes the most of every element of their exceptional produce. Sweetbreads will make an appearance, as too will tongue, heart and the crowning glory of a mutton suet pudding with kidneys. Oh, and a rhubarb trifle to shine a light on this most curious of vegetables that heralds the arrival of spring.

​​​​​​​Tickets are £85 per head and will include a four-course sharing-style menu and an arrival drink from Ford’s Gin.
