An ‘accidental chef,’ whose initial plan was to become a microbiologist, Phil built his career working with everyone from the Roux brothers to Marco Pierre White and Simon Hopkinson (at whose Bibendum he cooked alongside Jeremy Lee), before opening legendary restaurant The Square – aged 24 – with Nigel Platts-Martin. He went on to hold two Michelin stars at The Square for 17 years before selling it in 2016 to concentrate on his other restaurants with business partner Rebecca Mascarenhas – Michelin-starred Elystan Street, Kitchen W8 and Church Road. In May 2021, Phil launched OTTO, a home delivery pasta service – initially in South West London but with plans to go nationwide in due course.
