Quo Vadis & Friends: Cynthia Shanmugalingam

Cynthia is a British-Sri Lankan cook who grew up in Coventry, visiting Sri Lanka every year as a child in the summer holidays. After many years of acquiring recipes from her mother, grandmother, and the other gifted cooks in her family, she started a Sri Lankan pop-up called Rambutan, which is a remix of ancient and modern Sri Lankan cooking. With a particular focus on the recipes from the Tamil regions of the island, her style is light, fiery and fragrant, with much use of bold flavours: cinnamon, fennel, lemongrass, coconut milk, dried shrimp and roasted chillies. She dreams of finding a home for a permanent Rambutan restaurant some day.
