Quo Vadis & Friends: Santiago Lastra

For our next QV & Friends, we are delighted to welcome Santiago Lastra to spice up our stoves and transport us to sunnier climes.

Working in professional kitchens from the age of 15, Santiago had built up a star-studded CV by the time he returned to his homeland in 2017 to work on the launch of NOMA Mexico. As Rene Redzepi’s right-hand man, Santiago spent the year researching and sourcing exceptional ingredients from unassuming small-scale producers across the country.

​After this experience, travelling and getting to know the traditions and personalities behind Mexican gastronomy, he realised his calling: to champion and celebrate authentic Mexican cuisine using super seasonal British ingredients. Thus, KOL was conceived and he has been bringing a unique slice of Mexico to Marylebone ever since.

Since opening in 2021, KOL has received a Michelin Star and coveted positions in the World’s 50 Best rankings and UK’s National Restaurant Awards. Meanwhile Santiago was named Best Chef at the GQ Food & Drink Awards, and perhaps more importantly referred to as ‘impossibly handsome’ by the ever-discerning Fay Maschler. Bravo Santiago.​​​
